Meal Prep ~ Freezer Session 4 ~ Beef Enchiladas

I’ve been slowly (very slowly) working on some freezer meals for after the baby arrives. I haven’t made one in several weeks! OOPS! I have some catching up to do. I made these Beef Enchiladas a few weeks ago and they were delish. The best part is that there are only 4 ingredients! As usual, I made a double batch. We ate one for dinner and I froze the other one.

Here are a few tips

  1. The recipe doesn’t call for a specific cut of beef and I can’t remember what I used but I think it was a butt or round.
  2. I cooked the beef in the crock pot. I was in a hurry and didn’t have time to shred the beef before putting it in the fridge. This made it impossible to pull so I had to just chop it. It still tasted yummy but I think the texture of shredded beef would have been better.
  3. I didn’t freeze it with any sauce or cheese on top (there is sauce mixed into the beef and cheese mixture inside the burritos) because I was worried about it getting soggy. I will add both of these things when I cook it.
  4. I would serve this over rice with a veggie side for a more complete meal. For the one that we ate that night, I added refried beans to the burrito and served it with a side of Mexican rice (rice with a can of tomatoes). These are things that we almost always have in the pantry so they were an easy addition that didn’t require a special trip to the grocery store.
  5. My kids loved these!
